Wine in progress: Rosé

The final wine to report on in this series of updates is our rosé.  This is our first rosé from Kick Ranch in northeast Santa Rosa, and unlike prior years where our rosé was made entirely from Grenache,  we blended a tiny amount — or should we say soupçon — of Cinsault.  Cinsault is another varietal which is grown in the warmer parts of southern France, and it features in the rosés made in many parts of Provence.  While Christian does not aim to make provençal rosé in Sonoma County, he hopes to make a wine that will be enjoyed the same way:  at a long, lazy lunch on a warm summer’s day.

The rosé has completed its fermentation and now sits in an admittedly unattractive but functional steel tank undergoing cold stabilization.    Bottling is scheduled for February so that it will be ready for summer.  If you are shivering in the Polar Vortex right now, summer may seem a distant dream.  But that warm summer’s day will come, and we’ll be ready.
